Traveling with Airbnb!!

So you travel bugs…. Have any of you tried Airbnb yet? For those of you that don’t know Airbnb, you need to. Airbnb is going to REVOLUTIONIZE traveling! Airbnb is taking the concept of couch-surfing to the next level. You rent out a room in someone’s home like you would a hotel room. Now sounds awkward right? I was skeptical, but after trying it I don’t know that I will ever book a regular hotel room again!

When I searched for hotels for this visit to Encinitas, California I noticed the hotels had jumped fifty plus dollars. For a gross Motel 6 we were looking at one hundred and For 99$ we rented out this private entrance guest room. The room and bathroom had everything we needed shampoo and conditioner, fresh spring water, beach towels, and a fan. On Airbnb there were cheaper options, but I wanted a room with a private entrance and within walking distance of the beach.

Airbnb also has options to rent out entire homes for reasonable prices. In thailand and Brazil you can rent out entire homes for less then thrity bucks. WHAT… is right! Did that make you think you need to go to Thailand now or what????

My initial concern was the lack of privacy, which wasn’t a problem at all! Our hosts Chris and Ashley were very friendly and provided us with numbers to reach them and told us to knock for any questions. Other then that we saw them in passing as we did our own thing.

The benefit of using Airbnb is having the luxury of knowing all the local secrets!

Chris sent us a text each morning of our stay with all his suggestions for eating, activities, and must see areas. This is how we discovered the BEST fish tacos in this world, a local farmers market, and and an Indian coffee bar where we ordered this Cardamon Latte! All places we never would have come across on our own!!

 

Another super cool part of our experience was learning about the culture and history of Encinitas. Now keep in mind I literally don’t care for history at all. Chris talked about Yogananda (an enlightened mind) who lived and wrote life changing books about yoga, self realization, and meditation. I noticed the community was surrounded by not only a positive vibe but happy healthy people that I was drawn to. Chris and Ashley talked about “The vibrations” that bring us back to Encinitas time after time. Normally I would think it was a load of crap but the weird thing is, I am so drawn to Encinitas and the ocean and as I thought about that I wondered why and took that into consideration.

Another thing I considered as I listened to them talk about their lives and their culture there I remembered an experience I had the last time we visited. We visited Moonlight Beach early in the morning before we had to leave and it was foggy but I didn’t care. I got in by myself because the water was too cold for my husband. Anyways minutes after I got in it started pouring rain (If you know me you know I LOVE the rain) and the water calmed to soft waves. I floated and rode the waves in as the rain soaked my face and I was surrounded by fog . I can’t explain it but it was literally the most beautiful spiritual moment of my life! Sounds dumb but I swear.

Then of course this was the morning we left. Encinitas is once again mourning my departure! If you have the chance to visit Encinitas please do. Such a beautiful experience! Since leaving Encintas I’ve read a lot about self realization ,yoga, and eating healthy and I’ve tried to start on my own yoga journey. I’m hoping to channel some of their positive energy into my life and so far, I Love it! You can find inspiration to change and work on yourself anywhere but this time I found it using Airbnb! What a cool way to meet new people and to learn new things… I can’t wait to try it again!

Healthy Choco PB Cookies!!

I’m always looking for some way to cheat my ridiculous sweet tooth. Now folks, this will make a girl try some insane things… These are truly healthy Peanut Butter Chocolate Chip Cookies. No gluten, no eggs, no dairy …. say what?? You heard me right. These bad boys are made from CHICKPEAS. Yes, I know it sounds weird, but don’t knock it ’til you try it!!!

Ingredients:

-2 small cans of chickpeas (rinsed and patted dry)

-3/4 cup all natural peanut butter (I used chunky)

-1/2 cup all natural honey

-1/4 cup dark cocoa powder

-1 cup dark chocolate chips

Put everything in a blender except chocolate chips, add those last.

Looking good, looking good! Oil a cookie sheet and make decent sized clumps.

 

Bake at 350 for 15-20 minutes…YUM! For best results eat while hot. I baked ten and froze the rest to bake as I go. Makes about twenty. These cookies are a great source of protein. I have also tried to replace 1/2 the honey with a bit of Stevia and they still turned out great!

Espresso Gelato floats…mmmmm

Yum…. The perfect treat after a long day. Espresso mocha floats. I’m sort of an aspiring barista. Anything you can possibly combine with coffee that I have in my fridge, I have tried. I’m that weird chick who brings her own french press to work, then makes makeshift lattes for everyone. Sorry, not sorry.

Don’t have an espresso machine? No problem, I’m mostly too lazy to use mine. The key with espresso is all in the type of coffee you’re using. I bought this can at Walmart for four bucks.  To make yourself some fake espresso, put 3 heaping tablespoons coffee and 1.5 cups of H2O in the coffee machine. Brew as normal with filter.

If your coffee machine has a “Strong” button, use it for gosh sake! This is espresso we are making.

Now, we are going to move quickly here so keep up. Alrightyyy . . . . . put two scoops of any flavor gelato (triple chocolate is my favorite) in a glass.

Pour hot espresso on top of gelato for melty gooey deliciousness. Fill glass to top. Add whipped cream if desired

 

Enjoy ’till all gone. Pairs nicely with a snuggly blanket on the porch 🙂 (If you live in Phoenix, Arizona . . . .  do not attempt in -20 weather.

Iced Green Tea (and why you should drink it every day)))

I’m currently a waitress for Black Bear Diner and I love it. If any of you beauties also work in the food industry then you know about the downfalls already. A server runs, usually all night long ’till she is ready to drop. If you’re anything like me, I have SUCH a hard time meeting my H20 requirements for the day. I swear I don’t even drink one glass of water within a whole day. Green Tea helps me stay hydrated, while also loading my body with antioxidants and vitamins (which I need a lot of). I keep a box of Lipton Green tea in my purse at work and make it over ice. I have three or four cups a day. This is my current flavor, Lemon Ginseng (Delishhh)

Alright, my super secret oh so difficult Iced Green Tea recipe. Use one to two Green Tea bags in a cup of boiling water. I use two because the ice waters it down a lot. Let steep for ten minutes. Put in a glass with a ton of ice. Voila! You’ve got Iced Green Tea.  If you’re confused about the recipe message me (sarcasm HA).

Do you know how good Green Tea is for you?  Well you’re about to find out.

  1. Green tea increases fat burning and can help you lose weight! (My main reason for drinking it. I am a chub.)
  2. Green tea has a lot of caffeine but gives you a different kind of energy then coffee does. It doesn’t give you that jittery feeling. If you are particularly sensitive to caffeine or find after a few cups you’re feeling hyper, switch to a decaf version.
  3. Green tea has a ton of important antioxidants that lower your risk of various types of cancer!
  4. Green tea also improves brain function and can help your brain stay active. It also has been proven to lower the risk of Alzheimer’s disease and Dementia closer to old age.
  5. Green Tea has also been proven to lower the risk of heart disease, stroke, and lower cholesterol.
  6. Studies have suggested Green Tea helps with inflammatory skin diseases. (Like Dermatitis and dandruff)

 

Green Tea literally one of the healthiest drinks in the world! It really has a ton of benefits for both your body and mind. A couple key factors to remember. Organic is always better (also more expensive hence my Lipton). If you HAVE to sweeten it, sweeten with honey. Sweetening Green Tea by adding sugar to your diet every day I imagine would lessen some of those benefits.
